Sogno Toscano Spaghetti alla Chitarra is an artisan Italian pasta with a distinctive square-cut profile and substantial bite. Traditionally, spaghetti alla chitarra takes its name from the chitarra, a stringed pasta-cutting tool associated especially with Abruzzo, whose wires create the characteristic strands. Sogno Toscano’s version is produced in Tuscany from organic durum wheat semolina and water, then bronze-die cut, slowly dried, and packed by hand. Its textured, sturdy strands work beautifully with tomato sauces, pesto, carbonara, ragù, seafood, or cacio e pepe, providing more chew than conventional spaghetti. Sogno Toscano recommends approximately 10–12 minutes of cooking.
