This olive oil is made exclusively from Peranzana olives, a variety native to Northern Puglia known for producing elegant, aromatic, and well-balanced olive oils. Compared to the stronger Coratina olive oils from the same region, Peranzana olive oils are more balanced and aromatic, with medium intensity, fresh herbal notes, and a pleasant peppery finish.
The olives are harvested by hand and crushed using traditional stone mills, then cold extracted to preserve the natural aromas, flavor, and polyphenols.
