Our panettone is processed for 72 hours in which the most important phase is the refreshing of a yeast that is always kept alive. By working it with flour and water we ensure that it remains reactive, giving softness and flavor to the product. The raisins are of Turkish origin due to their high quality of selection: the grapes are harvested manually, dried naturally in the sun and chosen by color and size. The candied lemons and oranges are always Italian and are selected through a manual process. The scorzone is chosen from the orange because it gives a lot of aroma and flavor to the product through a degree of candying that better maintains and preserves the essential oils present in the fruit. Citron candied fruit is added to orange and lemon, which comes from South America and, given its limited availability, gives the panettone great value.
Ingredients: wheat flour, eggs*, candied orange -citrus and lemon peels (orange citrus - lemon peels, glucose-fructose syrup, sugar, acidity regulator: citric acid), sultanas, butter, sugar, natural yeast (wheat flour, water), rehydrated whole milk powder, egg* yolk, emulsifiers: mono and diglycerides of fatty acids, natural flavours, salt, cocoa butter.
