Auricchio Taleggio is a traditional Italian washed-rind cheese from the Lombardy region of Northern Italy. Taleggio is one of Italy’s oldest soft cheeses, dating back to Roman times, and is named after the Val Taleggio valley where it was originally produced.
Taleggio is made from cow’s milk and aged for several weeks in caves or aging rooms where it is regularly washed with salt water. This process creates its characteristic pinkish-orange rind and gives the cheese its distinctive aroma while keeping the interior soft and creamy.
The texture of Taleggio is soft, creamy, and slightly sticky, with a rich flavor that is mild, buttery, and slightly tangy with a subtle earthy aroma. Despite its strong smell, the flavor is surprisingly delicate and balanced.
Taleggio melts very well, which makes it excellent for cooking as well as for cheese boards.
