In 1858 Antonio Mattei baked his first Biscotti di Prato, which would soon become a staple of the Italian biscotti or cookies, tradition. For more than a century and a half, the Biscottificio (cookies factory) has been run by the Mattei family, gaining national and international fame, and solidifying as one of the landmarks of the city of Prato, in Tuscany.
