Adoro Mafaldine is a classic Italian long pasta made from durum wheat semolina. Also known as reginette, mafaldine features flat ribbons with beautifully ruffled edges. The wavy sides increase surface area, allowing sauces to cling along every curve for a balanced, flavorful bite.
The Mafaldine owe their name to Queen Mafalda of Savoy. It is said that the pasta maker who created them dedicated the shape to her, and they are sometimes referred to as “little queens.” The delicate lateral curls are believed to resemble the lace trim of royal dresses — a detail that gives this format both elegance and history.
The texture is firm and satisfying when cooked al dente, making it especially suited for rich, structured sauces. The combination of flat surface and rippled edges helps capture both creamy and chunky ingredients.
This shape shines in dishes such as:
-
Slow-cooked meat ragù
-
Sausage and tomato sauce
-
Bolognese
-
Creamy mushroom sauces
-
Ricotta-based sauces
-
Seafood sauces with body
Part of the Adoro special formats collection, Mafaldine are designed to enhance the flavor of both classic and contemporary recipes, adding a touch of refinement even to the simplest condiments.
Because of its ribbon shape and textured edges, it works best with sauces that are thick enough to coat the pasta rather than very light oil-only dressings.
