Don Gregorio Manchego DOP is made from the milk of Manchega sheep from the region of La Mancha, Spain. The rind pattern of the cheese is styled as if the cheese was wrapped in sheets of woven esparto grass. This sheep milk cheese is aged for three months which enhances the rich and luscious flavor.
