Gentile Eliche is a beautifully twisted Pasta di Gragnano IGP whose dramatic shape is exceptionally good at holding sauce. Eliche means “propellers” in Italian, describing the pasta’s spiraling form and the numerous curves and folds created along each piece. Crafted in Gragnano, Campania, by Pastificio Gentile—a historic producer dating to 1876—the pasta carries the protected IGP designation that links its production to this renowned pasta-making town. Gentile uses traditional bronze dies to create a textured, sauce-gripping surface and follows its Metodo Cirillo, a gentle drying method rooted in Gragnano’s artisan heritage. Eliche pairs beautifully with pesto, chunky tomato sauces, sausage, mushrooms, roasted vegetables, or creamy cheese preparations because ingredients become caught throughout its twists. Its sturdy, sculptural form also performs particularly well in baked pasta dishes and substantial pasta salads.
