Gentile Casarecce combines the pasta-making heritage of Gragnano, Campania with a rustic southern Italian shape designed to capture plenty of sauce. Casarecce means “homemade” in Italian, a fitting name for the loosely rolled, slightly twisted pieces whose curved channels collect sauces and small ingredients beautifully. Pastificio Gentile dates to 1876, and its Pasta di Gragnano carries the protected IGP designation, connecting production to one of Italy’s most celebrated pasta towns. Gentile shapes its pasta through bronze dies for a pleasantly textured surface and follows the traditional Metodo Cirillo for gentle drying. Casarecce are particularly delicious with pesto, tomato and ricotta, eggplant, mushrooms, sausage, vegetables, or hearty ragù, as sauces settle naturally into their folds. Their substantial texture also makes them an excellent choice for baked preparations and pasta salads.
