Soqquadro is a hollow square shape of pasta. Grinding only the finest wheat available by hand with stone millstones and water from Gran Sasso, Verrigni is the only producer in Italy that uses gold dyes to extrude their regional cuts of pasta. Verrigni's gold cut pastas have a different consistency than those cut with bronze molds. The pasta is dried in camerinas (small rooms with specially designed fans that keep the temperature of the pasta between 45 and 50 degrees), which is the ideal temperature for slow air drying pasta. When cooked, its absorption is rapid, and the pasta has a more intense wheat taste and a bright yellow color.
