Durum wheat semolina pasta obtained from the mixture of fine grains grown in Puglia and ground in local mills. the machines used in our laboratories have been built and perfected specifically for our needs. In this way, we can obtain orecchiette that have a unique shape, almost identical to those made by hand by the Apulian grandmothers.
