Orecchiette Pmc are produced in Alberobello (Puglia) with special machinery. With these machines, and with the special Apulian flour orecchiette are all different just like those homemade by grandmothers. After preparation are dried for 18 hours, to ensure the strength during cooking.
In Italy the most famous dish is orecchiette with cime di rapa sauce, dish of vegetables, but if you love simple dishes try also with with cherry tomatoes and basil.
