Aromas of fresh-cut grass and earth greet the nose in the form of a politely springy bloomy rind. Its texture is dense and velvety, and slowly but luxuriously coats the palate. The flavor profile is expressive of the milk type and the terroir—a symphony of cream, citrus, and nutty tones all play in harmony, finishing powerfully with notes of buttered mushrooms.
