Le Saunier de Camargue Fleur De Sel comes from the South of France. It has a natural white colour and is harvested in the salt marshes by the ancient walled city of Aïgues-Mortes. The salt is harvested at dawn entirely by hand by workers called ‘Paludiers’ – a practice which has remained largely unchanged for centuries. Only the youngest crystals from the very top layer of the salt ponds are taken by barely skimming the surface – meaning only tiny quantities are harvested. Fleur de Sel is a natural unwashed, unrefined and additive free salt from the sea sought after by chefs around the world.
