Gentile Mafalde Pasta is an artisan pasta from Gragnano, Italy, produced by the historic Pastificio Gentile, founded in 1876. Gragnano is known as the “City of Pasta” and is famous worldwide for its traditional pasta production methods and high-quality durum wheat pasta.
Mafalde is a long, flat ribbon pasta with ruffled edges, traditionally named after Princess Mafalda of Savoy. The ruffled edges help the pasta hold sauces very well, making it ideal for rich sauces and baked pasta dishes.
Pastificio Gentile produces their pasta using 100% Italian durum wheat semolina, bronze dies that create a rough, porous surface so sauces cling better, and slow low-temperature drying to preserve the aroma, texture, and nutritional qualities of the wheat. This pasta is certified Pasta di Gragnano IGP (PGI), meaning it is officially recognized as authentic pasta produced in the Gragnano region using traditional methods.
This pasta pairs especially well with:
• Meat ragù
• Tomato sauces
• Sausage sauces
• Mushroom sauces
• Cream sauces
• Ricotta sauces
• Baked pasta dishes
• Olive oil and parmesan
• Vegetable sauces
Artisan, bronze-cut, slow-dried, and PGI certified, Gentile Mafalde is a traditional ribbon pasta from Gragnano known for its ruffled edges and excellent ability to hold rich sauces.
