Galantino Gran Cru Affiorato Extra Virgin Olive Oil is a rare and limited-production olive oil produced by Frantoio Galantino in Puglia, Southern Italy. The Galantino family has been producing olive oil since 1926 and is known for combining traditional olive oil production methods with strict quality control and estate-grown olives.

This olive oil is made using the ancient affiorato method, one of the oldest olive oil extraction techniques. After the olives are crushed into paste, a very small amount of oil naturally rises to the surface before pressing and centrifugation. This oil is carefully skimmed by hand, producing an extremely delicate and aromatic olive oil. Because only a small quantity naturally rises to the surface, production is very limited — only about 5,000 numbered bottles are produced each year.

Gran Cru Affiorato is made exclusively from olives grown and harvested on the Galantino estate near Bari in Puglia, along the Adriatic coast. The oil is cold-extracted and handled very carefully to preserve its delicate aromas and flavors.

The flavor profile is light fruity and elegant, with notes of fresh fruit, almond, and mild olive, very low bitterness, and a smooth, delicate finish. This is not a strong or peppery oil — it is refined, soft, and aromatic.

Because of its delicate flavor, this olive oil is best used as a finishing oil, not for cooking.
