Benedetto Cavalieri Tubettini Rigati is a small, short, ridged tube pasta made from durum wheat semolina and produced in Maglie, in the Terra d’Otranto region of Puglia.
Tubettini (meaning “little tubes”) are smaller than standard rigatoni and feature ridges along the surface. Their compact shape and hollow center make them ideal for soups and spoonable dishes, where they capture broth and small ingredients in every bite.
The pasta is made from carefully selected durum wheat grown in Southern Italy without chemical fertilizers. The dough is slowly kneaded and extruded through bronze dies to create a textured surface, then dried at low temperatures to preserve the wheat’s character and nutritional integrity.
Unlike industrial pasta, which often appears smooth and glossy, artisanal pasta like Cavalieri’s retains natural starch on its surface. This porous texture enhances sauce and broth adhesion, resulting in a richer and more cohesive dish.
