Benedetto Cavalieri Rotelle is a distinctive pasta shaped like small wheels with spokes. Made from durum wheat semolina sourced from the hills of Southern Italy, this format combines visual character with practical function. The ridges and spokes are designed to trap sauce within every curve and crevice.
Produced according to Cavalieri’s traditional methods, the pasta is made from carefully selected wheat grown without chemical fertilizers. The dough is slowly mixed and extruded through bronze dies, giving the surface its slightly rough texture. It is then dried at low temperatures for approximately 40 hours — a process that strengthens the pasta’s structure while preserving the integrity and flavor of the wheat.
Unlike industrial pasta, which is often smooth and polished, artisanal pasta like Cavalieri’s retains natural starch on its surface. This allows sauces to cling more effectively and creates a richer, more satisfying dish.
