Stracchino Cheese is from Lombard origin. The name comes from the word "stracc" which in regional dialect, means "tired." According to tradition, the name derives from the fact that the milk that was originally used for the production of this cheese was that of the cows returning from the fields during summer: according to the shepherds were tired, because they produced in smaller quantities.

However, as often happens with local traditions, the versions are more than one: according to others, the cows and the milk were "stracc", tired, because the original production of the cheese took place in winter, with the milk produced by cattle fed on dry grass in the barn, which was less rich in nutrients.
